- 150 g mixed salad greens
- 250 g cherry tomatoeshalved
- 1 English cucumberthinly sliced into half-moons
- ½ red onionthinly sliced
- 4 tbs store-bought Italian dressing

Halve the cherry tomatoes, slice the cucumber into thin half-moons, and slice the red onion as thin as you can — a mandoline works great here, but a sharp knife does the job fine.
Tip: If you find raw red onion too sharp, soak the slices in cold water for 3-4 minutes, then pat dry. It takes the edge off without losing the crunch.

Add the mixed greens to a large salad bowl, then scatter the cherry tomatoes, cucumber, and red onion on top.

Drizzle 4 tablespoons of Italian dressing over the salad and toss gently until everything is lightly coated. Taste and add a little more dressing if needed. Serve immediately.
Tip: Dress the salad right before serving — the greens will wilt quickly once coated. If you're making this ahead, keep the dressing on the side until ready to eat.
