
Everything seasoning avocado toast with cherry tomatoes

- 3 medium avocados
- 200 g cherry tomatoeshalved
- 1 medium lemon
- 4 store-bought sourdough breadthick slices
- 2 tsp everything bagel seasoning

Halve the avocados and scoop the flesh into a medium mixing bowl. Use a fork to smash until mostly broken down but still chunky — you want some texture, not baby food. Squeeze in the juice of the whole lemon and mix to combine. The avocado should look bright green and glossy from the lemon juice.
Tip: Ripe avocados should give slightly when pressed near the stem. If yours are firm, mash more vigorously and add a tiny pinch of salt-equivalent seasoning to help break them down.

While you smash the avocado, toast the sourdough slices until they're deep golden and firm enough to hold the toppings without flopping — about 2-3 minutes depending on your toaster.
Tip: If your sourdough slices are very wide, you may need to halve them or use an oven broiler set to high for 1-2 minutes per side.

Divide the smashed avocado evenly among the four toasts, spreading it to the edges with the back of the fork. Pile the halved cherry tomatoes on top, pressing them gently into the avocado so they stick. Sprinkle everything bagel seasoning generously over each toast — you should see a visible, even layer of seeds and seasoning across the surface.

Serve immediately while the toast is still warm and crunchy under the cool avocado.
Tip: Best eaten right away — the toast softens quickly. If making for a crowd, toast bread in batches and assemble as each batch pops. Leftover smashed avocado keeps in the fridge for up to 1 day pressed with plastic wrap directly on the surface to prevent browning.
